Super easy “Mac n’ Cheese” alternative? Roasted cherry tomato + green onion, lots of olive oil + pinch of salt. Toss over gluten-free pasta - I love fusilli. The secret is not to add water so that the sauce is thick and with the olive oil + salt (a healthy vegan version of the cheese fat you might be craving). You could stir in a tablespoon of nutritional yeast to give it an even cheesier feel. The ratio of the sauce is almost half+half cherry tomato to green onion which gives it a great flavour but also colour that makes it look cheesy.
