Vegan GF Vanilla Donuts Organic Strawberry Glaze


1 1/4 cups of all purpose gluten-free flour

1/2 cup coconut sugar

1 1/2 tsp baking powder

1/4 tsp salt

1 cup + 2 tbsp coconut or vegan milk

2 tsp white vinegar

3 tbsp coconut oil

1 tsp vanilla extract


1/2 cup organic strawberries

Tbsp date sugar

Squeeze of lime juice

Preheat oven to 400 degrees. Lightly greased donut tray or muffin tin with coconut oil.Whisk together dry ingredients.Combine in a separate bowl wet ingredients. Slowly add flour mixture to wet ingredients and stir until just combined.Pour batter into a bag to pipe into donut tray, or fill muffin cups 1/3 full.Bake for 15-18 minutes, until golden brown and cooked through. Turn out onto cooling tray.For the glaze use a fork or combine in a food processor the ingredients.When donuts are almost cooled dip into glaze or coat with thick layer. Optional to add sliced strawberries on top. Enjoy immediately! Keep refrigerated.
