Sweet potato + Carrot + Cranberry Breakfast Muffins V/GF



3/4 cup oat flour/rolled oats

1 cup sweet potato cooked + peeled

2-3 raw carrots

1/4 cup dried cranberries

1/2 cup walnuts

1/4 cup dates (6)

2 tbsp cinnamon

Tsp ginger

1/4 tsp nutmeg

Tsp baking powder

1/2 tsp baking soda

Tbsp white vinegar

1 chia egg

Combine bit by bit in the food processor in the order.

Grease your muffin tin with a bit of coconut oil.

Fill each 1/2 way. Bake at 350 for 20 minutes. Makes 12 muffins.
