Mong Bean + Quinoa Salad

Pre-soak 1/2 cup mong beans + 1/4 cup quinoa separately for at least 5 hrs.

Boil beans for 35 min or until done. Drain. Cool.

Cook quinoa 20 min or until done. Drain. Cool.

Mix with your favourite raw veggies chopped finely.

I like radish, onion, cilantro.

Red or green pepper, purple cabbage, carrot and/or jicama would be delicious as well.

Optional to add olive oil, sea salt and/or a squeeze of lime.

Serves 2 as a meal or 4 as a side dish.

Keep it simple, keep it fresh!
