Flourless V/GF Brownies



1 cup black beans

1 cup sweet potato

6-8 dates

1/4 cocoa powder

1/4 cocoa nibs

1/4 coconut oil

Banana

2 tbsp vanilla

1 chia egg


Combine all ingredients in the food processor, leaving the chia egg to last.

Grease a brownie pan with coconut oil, spoon batter into the pan.


Optional to sprinkle a few more cacao nibs on top.

Bake at 350 for 30-35 minutes until the toothpick tests clean.


Allow to cool completely. Serve alone, with fresh blueberries and/or a dollop of peanut butter.


Store in the refrigerator.
