Christmas Kale Salad

The perfect combination of dark leafy greens, superfoods, healthy fats, a prebiotic + vitamin C!

2 bunches of kale 🥬 🥬

2 limes

10-15 strawberries 🍓

1/4 cup sliced red onion

Drizzle of olive oil to taste

Handful of chopped walnuts

15 brussel sprouts

Roast the brussel sprouts in the oven at 170C/325F for 30 to 40 minutes, you can drizzle olive oil before you put them in and sprinkle with salt for ultimate flavour.

Wash & thoroughly dry the kale leaves. Remove stems, chop or rip into pieces. Juice the lime and massage into the kale leaves for several minutes.

Toss with the remaining ingredients, drizzle oil, lime juice and salt on top at last minute. Finally toss the Brussel sprouts in once they have cooled off a bit.

Feel free to modify the ratios. You could use pomegranate instead of strawberry.

Strawberries are a great source of vitamin C!

Raw onion is a prebiotic (food for the good bacteria in your gut).

Walnuts are full of vitamins + minerals, in particular Manganese, Magnesium + Vitamin B.

Makes 8 small servings for a starter or 4 large servings for a main course. It would go great with some grilled salmon!
