Blue Zones Lentil Soup



1 1/4 cup lentils

7 cups veggie broth

2 large tomatoes diced

1 white onion

2 medium carrots diced

2 medium potatoes peeled + diced

2 bay leaves

1/2 tsp salt

Chives chopped for garnish

Olive oil


Spread the lentils out on a cookie sheet or counter top to check for pebbles.


Sauté the onion + carrot in a bit of olive oil for a few minutes before adding all other ingredients into a large pot.


Cook on low heat for 45 minutes or until the lentils are done.
